A couple weekends ago I was at Safeway when I found a can of Libby’s Easy Pumpkin Pie mix. I love anything with pumpkin and had to snatch it up figuring I would have no problem thinking of something to bake.
Then I found a recipe for crumble-top pumpkin muffins. Perfect. But instead of just making regular old pumpkin muffins I thought to spice it up a little and add some protein. These were already pretty low-calorie and healthy-ish, why not make them a little better?
Crumble-Top Pumpkin Muffins
Prep: 25 minutes Cooking: 16 minutes Yields: roughly 24 muffins
4 cups all-purpose baking mix
1 cup raisins (optional)
2/3 cup quick or old-fashioned oats
2/3 cup granulated sugar
1 teaspoon ground cinnamon
1 can (30 oz) Libby’s Easy Pumpkin Pie Mix
2 large eggs
Streusel topping
Directions:
Preheat oven to 400 degrees. Paper-line or grease 24 muffin cups.
Combine baking mix, raisins, oats, sugar and cinnamon in large bowl. Combine pumpkin pie mix and eggs in medium bowl; mix well. Stir into oat mixture just until moistened. Spoon batter into prepared muffin cups, filling 3.4 full. Sprinkle with Streusel Topping.
Bake for 14 to 16 minutes or until wooden pick inserted in center comes out clean. Remove from pans to wire rack; cool slightly. Serve warm.
For Streusel Topping: (which I didn’t use)
Combine 3 tablespoons all-purpose flour, 3 tablespoons granulated sugar and 3/4 teaspoon ground cinnamon in small bowl. Cut in 2 tablespoons butter with pastry blender or two knives until mixture is crumbly.
My changes:
I used 2 packets of cinnamon spice quaker instant oatmeal (it’s just over 2/3 cup) and cut the sugar down to just under 1/2 cup. I also added 2 scoops of protein powder, no flavor, from Wildflower Market. I’m not a fan of raisins so I didn’t use those either.
I made half the batter into muffin tops and the other half into standard muffins. They are a great snack after a morning workout before I want to eat my full breakfast.
